Rolled Italian Flank Steak

2.5 lbFlank Steak
4 clovesminced garlic
2 Tbspminced fresh parsley
1 tspminced fresh sage
1tspminced fresh basil
2 TbspOlive Oil
4 ozprosciutto
4 ozthin sliced provolone cheese
saltto taste
pepperto taste


  1. Combine garlic, parsley, basil, sage, and olive oil in small bowl. Mix and set aside.
  2. Place the flank steak on a cutting board with the short end closest to you. Starting from one of the long sides, cut through the meat horizontally to within 1/2 inch of the opposite edge.
  3. Lay prosciutto evenly over open steak, leaving 1-inch border along top edge.
    Cover prosciutto with even layer of cheese, leaving 1-inch border along top edge. Cover cheese with the oil and herb mixture. Close the steak.
  4. Starting from bottom edge and rolling up away from you, towards the top, roll steak into tight log and place on cutting board seam-side down.
    Starting in the middle of the steak roll, tie a piece of kitchen twine to secure the steak. Working outward from the center, place more ties of kitchen twine, in one inch intervals, until the whole steak roll is tied up.
  5. Season the rolled steak with salt and pepper, then place in a skillet over med-high heat for 2-3 minutes per side to sear. Transfer the steak to a baking dish and place in the oven for 20-30 minutes until desired temperature is reached.
