Poor Man's Beef Wellington

2eggs, beaten
1.5 lbsGround Beef
4 TbspBread Crumbs
2 TbspDried Parsley
1 tspSalt
1 TbspCream
3 TbspButter
1Onion, small - chopped fine
4Garlic Cloves, minced
8 ozBaby Bella Mushrooms
1/2 cupRed Wine
1 tspBasil
enoughCheese (optional) - provolone or mozzarella
2 sheetsPuff Pastry


  1. Heat oven to 400 degrees. Mix the first 6 ingredients (eggs, beef, bread crumbs, parsley, salt, cream) well and set aside.
  2. In a large skillet, melt the butter and add the mushrooms and onions. Cook over medium high until onions are translucent and the mushrooms have sweated.
  3. Turn the heat down to medium and add the garlic, basil, and red wine. Turn the heat to high and cook until the mixture has reduced down. Remove from heat, cool.
  4. On a lightly floured surface, spread out the puff pastry and cut into quarters. Spread the mushroom mixture across each square and top with cheese if desired.
  5. Place 1/2 cup of the meat (formed into a flattened ball) on top and then pull the corners of the pastry up and over, pincing the seams closed.
  6. Place the bundles on a well oiled cookie sheet, seam side down. Cut an 'x' in the top of each, then brush with an egg wash.
  7. Bake for 20-30 minutes until the crust is golden brown and the meat is cooked to temperature.
  8. Remove from oven and let sit for 5 minutes. Serve with brown gravy.


Makes 8 bundles, halve the recipe for 4.
