Chili

Ingredients

2 tbspOlive Oil
6 cloveschopped garlic
1 lbground beef
1 lbitalian sausage (remove casings)
5 stripsuncooked bacon
1medium onion, diced
1/4 cupchili powder
1 tbspcumin
1 tbspdried oregano
1 tbspkosher salt
26 oz cans of tomato paste
314 oz cans of diced tomatoes
1can rotel
115 oz can (drained/rinsed) kidney beans
115 oz (drained/rinsed) black beans

Steps

  1. Heat the oil in a large frying pan over medium heat until shimmering. Add the onions, season with salt and cook (stirring occasionally) until sofftened - about 8 minutes.
  2. Add the garlic, chili powder, and cumin. Stir to coat and cook until fragant - about 1 minute.
  3. Add the meat, and kosher salt. Break the meat into small pieces as you cook, until the beef is no longer pink - about 7 minutes.
  4. Transfer the mixture to a crock pot, add the tomatoes with juices, and beans and then stir to combine. Cover and cook until the chili thickens and the flavors meld - about 8 hours on low or 6 hours on high.

Note

Add 1 15 oz can (drained/rinsed) pinto beans if you want more beans
