Cuban Sandwich


1Pork tenderloin
1Mustard (Dijon, spicy brown, etc)
plentySwiss Cheese slices
plentySliced deli ham


1/4Cup Orange Juice (need slices too)
2 TbspLime juice (need slices too)
2 TbspCumin
2 TbspSalt
2 TbspPepper
3Garlic cloves


  1. Line a baking sheet with parchment paper and place the tenderloin on it. Use a fork to poke holes on all sides of the tenderloin
  2. Mix the marinade well, and then thoroughly coat the tenderloin on all sides. Place the lime and orange slices, alternating, on the tenderloin. Place the tenderloin in the oven for 30-35 minutes - until the internal temperature is 145 degrees. When the tenderloin is done, remove and let rest for 5-10 minutes then thinly slice.
  3. Slice the bread and spread mustard on one side, mayonnaise on the other. Place a layer of pork, then sliced ham, pickles and cheese. Move the sandwiches to a panini grill and grill for a few minutes until the cheese is melted and desired toastiness of the bread is reached.
